Happy (Orthodox) Easter for this weekend
Happy Easter to Sally and Chef Jonny and I am guessing Patricia. The kids' babysitter and dear friend to our family, Maria, brought us some Greek Easter biscuits this morning. I could tell without tasting them that they were much lighter than normal Greek biscuits. She said she used her mother's recipe, the main defining ingredient of which is something called baking ammonia (rather than baking powder). Apparently it is only available in certain Continental grocers here in Australia. It really made a difference though. I ate one of the biscuits for morning tea and it was delicious!
